Toasted Banana Bread

Crispy on the outside and fluffy soft on the inside – that's how we know our banana bread fresh from the oven. With this recipe and a little hack, however, each slice of our beloved classic becomes an absolute taste sensation! Simply heat individual, previously frozen slices in a toaster and quickly create the popular crunch effect. Delicious!

3  ripe bananas
2   eggs
100  g brown sugar
100  ml neutral oil
1  tsp cinnamon
200  g flour
1  packet of backing powder
1  pinch of salt

Step 1

Preheat the oven to 160 degrees Celsius (fan-assisted) and line a loaf pan with baking paper.

Step 2

Beat eggs and sugar until fluffy. Add oil and mix on the highest setting until a fluffy mass forms.

Step 3

Mash the bananas with a fork. Add the banana puree and cinnamon to the egg-sugar mixture and stir in.

Step 4

Finally, add the sifted flour, salt, and baking powder and mix.

Step 5

Pour the batter into the prepared loaf pan and bake for about 50 minutes.

Tip

Your oven surely has space for two cake pans! Therefore, prepare double the amount of dough and bake two banana bread loaves in one go. Afterwards, you can simply pre-portion and freeze the second loaf: Cut the loaf into slices, place them in a large paper freezer bag, and put it in the freezer. Whether for breakfast or when unexpected guests arrive: Let the pre-cut banana bread slices thaw for 15 minutes, then heat the individual slices at medium level for 1-2 minutes in the toaster and garnish with walnuts and honey!
