Ratatouille with Eggplant and Zucchini

Mediterranean dishes are a must on our menu – and a delicious Ratatouille is one of our absolute favorites! This savory stew is not only quick to prepare but also a culinary all-rounder for both big and small appetites.

Whether served as a savory side dish or as a complete meal with a piece of baguette – Ratatouille can be wonderfully prepared in large quantities and frozen. A 3-liter Toppits® Paper Freezer Bag can comfortably hold two servings, ready to be thawed and fill hungry bellies.

Ingredients

For 4 servings
1  large Eggplant
2   Zucchinis
1   Onion
2   Bell Peppers
2   Cloves Of Garlic
5  ripe Tomatoes
1  tbsp Tomato Paste
2  tsp Freshly Chopped Thyme
3  tbsp Freshly Chopped Basil
   Salt & Pepper
   Olive Oil

Preparation

Step 1

Heat olive oil in a large pan over medium heat. Cut the eggplant into small pieces, add to the pan, and season with salt. Fry until soft and slightly browned. Then transfer to a plate and set aside.

Step 2

Dice the zucchini and fry for about 3 to 4 minutes. Season with salt and then transfer to a plate as well.

Step 3

Now chop the onion and bell peppers and fry in the pan. Chop the garlic, add it to the pan, and continue to fry everything together for about 3 minutes.

Step 4

Quarter the tomatoes and add them to the pan with their juice, tomato paste, thyme, and salt. Cook until the tomatoes break down into a sauce.

Step 5

Add the pre-cooked zucchini and eggplant pieces to the pan. Bring to a boil, then reduce the heat and simmer uncovered for another 5 minutes.
