Many popular household tips claim that the glossy side of the aluminium foil should be on the outside when wrapping food, but this stubborn myth can be dispelled once and for all.

Aluminium foil – which side should you use?

Even if it is perhaps a little sobering, in most cases it really doesn't matter which way round the aluminium foil is used. There is hardly any difference between the matt and glossy sides of aluminium foil when it comes to wrapping food. However, if you want the finer details, knowing something about the physical properties of the foil may help -  glossy surfaces reflect light and heat better than matt ones. Which side to use depends on whether the wrapped food is to be kept warm or cooled.

Which side of aluminium foil is used for what?

Knowing about the physical properties of the foil leads to a simple approach:

  1. If the food is to be kept warm, it is a good idea to have the reflective, i.e. glossy side of the aluminium foil on the inside.
  2. If food is to be kept cool, it is better to have the matt side of the foil on the inside.

Why does aluminium foil have two different sides?

Considering that in most cases it doesn't matter which side of the foil is used, and that it often makes no difference at all, the question arises - why does aluminium foil have two different sides? The explanation is quite simple - during production, two foils are processed at the same time and when they go through the rollers during processing one side becomes matt and the other glossy.
